Vinification | The harvest for this wine is entirely manual and 12-kilogram boxes are used. The bunches are then put whole into cement vats, which are sealed. After this, the natural yeasts have to do their work. This is an unusual vinification for white wine, resulting in a slightly oxidative wine. After fermentation, the wine is pressed and finally stays on cement for another 6 months. |
