Vinification | The harvest for this wine is entirely manual and 12-kilogram boxes are used. The bunches are then put into stainless steel vats whole. After this, the natural yeasts must do their work. This is an unusual vinification for white wine, resulting in a slightly oxidative wine. After fermentation, the wine is pressed and finally stays in stainless steel for another 6 months. |
