Vineyard | The vineyard for Le Carré is located a stone's throw from Les Asteries, is only 1.05 hectares in size and planted in 1956. This vineyard is separated only by a wall from the famous Clos Fourtet and was acquired from Chateau Canon in 2005. Despite having the same grapes as Les Asteries and being located not far from it, the two parcels are not used for one wine. This has everything to do with the terroir which is very different. Vinification | After the manual harvest there is a strict selection of the grapes. First a check of the bunches and after destemming the grapes are checked again one by one. This is followed by pressing and the must is then put into large wooden barrels for fermentation. The malolactic fermentation takes place in French oak. On this, the wine is aged for 18 months. |
