Vinification | At Boyer-Martenot, all grapes are hand-picked and, upon receipt in the cellar, pressed with a pneumatic press. Fermentation is temperature controlled and the upbringing is on 225-liter wooden casks and on concrete eggs. One third of these barrels are new and total lagering is 20 months. Once a week there is batonnage. |
