Vinification | At Pernot-Belicard, all grapes are picked by hand and pressed in the cellar with a pneumatic press after receipt. The fermentation is temperature controlled and the fermentation takes place in wooden barrels of 228 liters. One third of these barrels are new and in total there is a maturation of 16 months, of which 11 months in oak. |
