About the winemaker
One of the most striking wine companies in South Africa is without doubt De Toren Private Cellar, founded by Emil den Dulk and Albie Koch. A wine company, which has made a name for itself with red wines based on the five grape varieties from Bordeaux. Emil retired and handed the company over to new owners. Albie Koch now runs the daily operations together with the owners. The various wines from the hand of winemaker Charles Williams are known for their complexity, aging potential, accessibility and, of course, towering quality. Since they work with gravity, the wines have a different tannin structure and can be used in gastronomy in their youth. However, the wines also benefit from several years of cellar storage.

| Vinification | When the malbec grapes are harvested, juice is obtained via the saignée method. After vinification, wine (cabernet sauvignon and merlot) is added, which has been aged for a year in wood. In fact it is a blend of two vintages. At De Toren we work entirely with gravity, to move the wine through the cellar. From the moment of pressing until bottling, gravity is used. |
