Vineyard | The grapes come from the El Ensueño vineyard in the cool Lo Ovalle section of Casablanca Valley. The location close to the ocean causes botrytis to develop on the grapes and only in those years when botrytis occurs is this wine made. |

Vinification | Grapes are harvested manually at the end of April and only those with botrytis are selected. After entry, the grapes are pressed and the must goes into old used oak barrels for fermentation. The wine spends a minimum of 8 months in these barrels. The wine has a nice balance of acidity and residual sugars. After vinification and at bottling, the wine had a residual sugar content of 101.6 grams per liter. |
