Vineyard | At the base here is a vineyard, planted in the 1930s. The soil of the vineyard consists mainly of decomposed Table Mountain Sandstone, or a sandy rock rich in quarts that formed 510 to 400 million years ago. It is a vineyard, where herbicides or pesticides have never been used. At the same time, it is a very small vineyard with an extremely low yield. |

Vinification | After harvest, the drive back to the cellar is a long one of almost 5 hours. The grapes are stored for one night at 4 degrees. The grapes are not destemmed before pressing and the juice then goes into large wooden barrels for vinification. The alcoholic fermentation often lasts up to 6 months and the malolactic fermentation is finished. The wine stays in the wooden barrels for 12 months before being bottled. The wine is neither clarified nor filtered and is best decanted before drinking. Yield 16 hl/ha. |
