About the winemaker The Paul Thomas estate is led by Raphaël Thomas and is located in the middle of the by far best village in the Sancerre appellation: Chavignol. The domain, like many other houses, makes mainly white wines from sauvignon blanc. Rapahël aspired to a different career, but when his father died suddenly in 2000, he returned to Chavignol, to continue the domain. In total, the domain makes about 90,000 bottles, 75% of which are white wines. Most important wine is the Les Comtesses of Monts Damnés, a monopole on the Monts Damnés next to, for example, Clos la Néore of Domaine Edmond Vatan. A wine with enormous ageing potential.

Vineyard	Grapes for this wine come from the monopole Les Comtesses on the famous hill of Chavignol: la Côte des Monts Damnés. The soil is mainly kimmeridge and is marl-rich. Vines are on average 25 years old.
Vinification	After the manual harvest, the grapes are destemmed, pressed and vinified. The must then goes into temperature controlled vats, where a low temperature allows for slow fermentation and for very fine aromas. The wine stays for 8 to 10 months on the lie.
