Vineyard | Duncan Savage selected several vineyards, which are the basis of this wine. Vineyards can be found in Kaaimansgat, Villiersdorp, Piekenierskloof and Stellenbosch. These are both vineyards near the sea, as well as more inland and therefore a bit higher situated. The grapes are hand-picked. |

Vinification | After harvest, the grapes arewhole-bunch pressed, after which 100% of the must undergoes malolactic fermentation. This is followed by lagering in old large wooden barrels of French oak and concrete eggs for 10 months. There is minimal intervention during vinification, to allow as much terroir as possible to be reflected in the wines. 76% Sauvignon blanc, 24% sémillon. |
