De Toren Private Cellar | South Africa | Stellenbosch |
Vineyard | The folks at De Toren are accused by some critics of obsessive vineyard management. It can't go far enough for us. Before starting De Toren, Emil did extensive research on the terroir. The vineyards are located at 170 to 200 meters above sea level and roughly 7 different soil types can be distinguished. The type of vine and even clone is tailored to each soil type. As a result, there are a total of 18 different clones of the 5 grape varieties that have been planted. The cooling breeze from the sea, called Zipper, ensures perfect harmony and contributes to the perfect ripening of the fruit. |
