Chassagne-Montrachet measures a total of 70 hectares of vineyards and
both pinot noir and chardonnay are planted. Chassagne has a soil rich in
calcareous marl. Furthermore, the vineyard is rich in pebbles and this means
that the vineyard is well permeable to water. Thanks to long-standing
relationships, Bouchard Père & Fils has the opportunity to purchase fruit
here every year. The soil in this premier is characterized by a high content of
limestone and clay rich in marl. |

Vinification |
The harvest is manual
and in boxes of 13 kilos. There is a soft pressing that takes up to 2 hours.
This is followed by fermentation, during 9 to 10 months, in oak barrels of 225
liters of which 15% are new. The wines are blended and then spend 3-4 months on
stainless steel. |
