Vinification | After harvest, grapes are fermented and aged in new and old large wooden barrels of French oak. Lagering for 11 months. 90% of the grapes is destemmed and both grapes are harvested at the same time. Especially the destemming is a labor-intensive treatment. There is minimal intervention during vinification, to allow as much of the terroir as possible to be reflected in the wines. |
