The palate has ripe stone fruit and green apple fruit flavours, a fine acid backbone with a slight salty /wet stone textural element, crisp and dry. Vinification | The grapes are grown in the Brêloft vineyard in the Awatere Valley in Marlborough. Shoot thinning, leaf picking, fruit drop and removing all shoulders. Here the perfect environment for Chenin to ripen is created. Only the golden bunches on the north facing side of the vines are picked. After a cold settlement the bunches are foot stamped followed by a whole bunch press.Alcolholic fermentation took place in oak barrels and the wine was kept in those barrels for an other 10 months for the malolactic fermentation. |
