| Vineyard | The vineyards for this wine are located on the southeastern flank of Mount Etna at about 450-550 meters altitude, near Viagrande north of Catania. The soil here consists of volcanic rock and volcanic sand. With a planting density of 6,500 vines per hectare and various pruning methods, the yield is about 55 hl/ha. The vines are on average 35 years old. |

| Vinification | After the manual harvest, the grapes are destemmed and then a skin soaking of 20 days follows. The must is pumped over the cap several times during this process. The wine spends 12 months in both stainless steel and oak barrels of various sizes. After bottling, there is an additional bottle aging of several months. 90% nerello mascalese, 10% nerello cappuccio. |
