Domaine Yvon Clerget | France | Bourgogne - Côte de Beaune |
Vineyard | The Clerget family's property in the premier cru Caillerets is 0.47 hectares and the vineyard was planted in the 1950s. The vines can be found right next to the adjacent premier cru Clos des Chenes. The soil here is rich in calcareous clay, limestone and large pebbles. |

Vinification | The vinification at Thibaud is highly dependent on the vintage. Vinification entière one year and no vinification the next, use of new oak depends on the appellation of origin etc. This premier cru is for 20% raised on new oak. The wine is aged for 12 months in 228 liter oak barrels and after that it stays for another 4 months in tank after blending. Remarkable about this vineyard is that there are always many millerandage grapes. This makes for a very concentrated wine. |
