Vinification | After a manual harvest in 13-kilogram crates, a manual selection follows. The grapes are completely or partially destemmed depending on the vintage. Fermentation takes about 15-20 days. The wine is matured in 225-litre oak barrels, of which 30-40% are new. The wine stays 12-14 months in oak, depending on the vintage. |
