Vinification | The grapes are handpicked in 13-kilogram boxes. Depending on the vintage, there is a full or partial vinification entière. Fermentation is between 15-20 days and after pressing there is an upbringing in oak barrels. The ageing process takes 12-14 months and 30-40% of the barrels are new. |
