About the winemaker Founded in 1731, Bouchard Père et Fils is one of the oldest wineries in Burgundy. A winery with a long history and an impressive acreage of vineyards. With 130 hectares of its own vineyards spread over 12 Grand Cru's and 74(!) premier cru's among others, winemaker Frédéric Weber has access to a unique terroir. As of the 2020 vintage, the vineyards are in conversion to organic viticulture and with this, the winery is sending a great signal in the Burgundy wine region. Many vineyards were already farmed organically, but the certification will follow in 2024. Montrachet, Corton-Charlemagne, Chevalier-Montrachet, Beaune Grèves Vignes de l'Enfant Jésus, Bonnes-Mares, Meursault Perrières are some of the prestigious vineyards that belong to the vineyard estate.

Vineyard The premier cru Les Cailles is south in the appellation of Nuits-Saint-Georges. The premier cru is 3.81 hectares and the vineyard of Bouchard Père et Fils is 1.08 hectares. The soil is mainly rich in limestone. The vineyard has a southeastern exposition.
Vinification The grapes are handpicked in 13-kilogram boxes. Depending on the vintage, there is a full or partial vinification entière. Fermentation is between 15-20 days and after pressing there is an upbringing in oak barrels. The ageing process takes 12-14 months and 40-50% of the barrels are new.
