Vinification | In the Changarnier cellar, the wines are made according to traditional vinification methods. All wines stay in French oak barrels, for the premier cru's slightly more new oak (about 30%) is used. For these wines, about 30% of the barrels are new and the grapes are destemmed after entry. The first fermentation takes place on concrete for 3 months. After this an upbringing in oak for 10 months. |
