Vineyard | Wine from only chenin blanc sourced from a trio of vineyards in Olifantsrivier. An area known for its mass production, but fortunately Eben Sadie has found vineyards here that have not been affected by herbicides and pesticides that are so often used here. The soil consists of sandy rocks and has a very sandy character. There is little rainfall in this region and the vines have had to work hard to survive without irrigation. One vineyard gives aromatic fruit, the second earthy character and terroir, while the third and highest vineyard provides acidity and fraîcheur. |

Vinification | Grapes from the vineyards are vinified separately and are first cooled back for 3 hours after harvest. Fermentation starts spontaneously and this lasts up to 6 months, after which malolactic fermentation is also completed. The wine is neither clarified nor filtered and is best decanted before drinking. Yield 15 hl/ha. |
