Vinification | After a manual harvest in 13-kilogram crates, there is a gentle controlled pressing that takes about 2 hours. The upbringing is in 225-liter oak barrels, of which about 15% are new. The wine stays in oak for 9-10 months, depending on the vintage. The wines from the different parcels are vinified separately and blended after ageing in oak. After blending the barrels, the wine stays in stainless steel for 2-3 months. |
