Vineyard | The vineyard Les Chênes has a soil with a lot of calcareous clay and the vines are on average 45 years old. There are 7000 vines per hectare, so there is a good planting density. Through a green harvest, if necessary, the yield is kept at about 66 hl/ha. Efforts are made to harvest at a potential alcohol content no higher than 13%. |

Vinification | After harvest the grapes are pressed immediately and the débourbage takes about 24 hours. No yeasts are added for alcoholic fermentation. If it is necessary to filter before bottling, this is done with bentonite. |
