Domaine de la Grange des Pères | France | Languedoc |
Vineyard | Laurent Vaillé returned to his native soil in the village of Aniane in the late 1980s and focused on the vineyards in the hills surrounding this village. Vineyards that no one really saw any point in, too difficult to cultivate etc. The soil here consists of limestone, boulders and smaller stones and the grapes grow in gobelets. He got these from Gérard Chave and Eloï Durbach of Domaine Trévallon. The vineyards have an exposure to the south and give low yields, between 20 and 22 hl/ha. In total, there are about 9 hectares of blue grapes for the production of this unique red wine. |

Vinification | After the manual harvest, all grapes are vinified separately and aged in 228-liter oak barrels. When vinification is complete, the wines are blended and then enjoy another bottle aging in Laurent Vaillé's cellar before being released to the market. |
