Vinification | After the harvest, the wines are taken directly to the small cellar in the heart of Chavignol. The grapes are pressed and the juice pumped into large standing vats for alcoholic fermentation. No yeasts are added for this purpose. After about 8 months, the wine is bottled and then receives bottle aging in the estate's cellars. |
