Vinification | Grapes are hand harvested between mid-April and mid-May. Cabernet Sauvignon is harvested first and carmenère last. Fermentation takes place in temperature controlled stainless steel vats. After this, the wine is transferred to oak barrels, where the wine matures for 12 months. |
