About the winemaker
For more than six generations, the Peytavy family has had their vineyards on the hill of Aumelas, about 25 kilometers north of Montpellier. Phillippe and Stéphanie have been in charge of the domain since 2002 and, like every generation, they have modernized and changed the domain to their liking. The most important step for them was the switch to organically certified viticulture.

| Vineyard | The grapes come from vineyards with a northern exposure. The soil consists mainly of calcareous clay. The vines are about 40 years old. |

| Vinification | Traditional vinification with completely destemmed grapes. Grapes are vinified separately without the addition of sulphite. Syrah is partially aged in oak barrels, all others fully in stainless steel for 10 months. Composition: 33% syrah, 33% grenache, 25% carignan and 9% cinsault. |
