Vinification | The domaine manages tables of trie with as many as 40 people sorting each bunch by hand. At d'Auvenay, work is done according to the vinification entière, but the thick top of each bunch is cut and removed by hand and each bunch size made uniform, large bunches are cut in half to create an even settling in the tank. Sorting is considered so important that the process is never rushed and is carried out by the same group of workers, who have worked in the field for many years. If necessary, they keep grapes cool in storage overnight during the busiest harvest period to allow for adequate sorting of each batch that enters the winery. After vinification, the wines often continue to age for many years in the estate's cellars. |
