| Vinification | After harvest, the grapes go whole-bunch into the tank for fermentation, with the wine being pumped around twice daily. After this, a passage to concrete, where the wine spends 11 months on the lie. Before bottling, a minute amount of sulfite is added. The wine is neither clarified nor filtered and is best decanted before drinking. |
