About the winemaker Lotte Wolf chose Swartland, South Africa as the region where she wanted to make her wines. It was for her the area with by far the most inspiring winemakers. For years she had been pouring their wines with love in the top restaurants where she worked. The purity of this authentic wine region was an extension of her own life motto: You make wine with your heart and not according to the rules. She ended up with one of the famous Swartland Cowboys: Johan Meyer. Today Johan and the team of the Lotte Wolf Foundation make the wines in the spirit of Lotte.

Vineyard	All grapes come from one vineyard in Horse Mountain. The vineyard was planted in 1997 and all grapes are Gobelet pruned (Bush Vines). There is no irrigation. As of 2014, the vineyard is operated organically and no chemicals are used. The soil consists mainly of weathered granite and the vineyard has a slope towards the southwest.
Vinification	The grapes are harvested at different sugar levels to ensure the wine has good pH and acidity, along with good structure and aromas. Oxidation before the start of fermentation was allowed to improve complexity and shelf life of the wine. The wine was fermented in mainly (90%) stainless steel at a lower temperature (14C), the rest of the wine was fermented in used 300L wooden barrels. 20% of the grapes were fermented whole on the skins with a total of two weeks of skin contact. The wine was raised for 7 months in stainless steel and used wood barrels, then blended and bottled in September. The wine was not clarified and not filtered.
