Vineyard | The various vineyards are located in the village of Saint Aubin and the much more famous Chassagne-Montrachet. In total they are three vineyards of 150 acres, which were planted in 1970 and 1979. This gives an annual production of up to 6,000 bottles. The soil consists of marl-rich limestone and is very permeable. |

Vinification | At Lamy-Pillot, a classic red winemaking process is used, with malolactic fermentation taking place in oak barrels. With this wine, there is also a portion raised on large cuves. The ageing varies by year from 12 to 18 months. |
