Vinification | After the harvest there is a strict selection to pick out both unripe and overripe grapes. The bunches are then fully fermented in an open vat and twice daily there is a punchdown. After a month the grapes are pressed in a basket press and then the wine goes into oak foudres for 11 months. The yield is 28hl/ha and the wine is neither clarified nor filtered and is best decanted before drinking. |
