Vinification | Manual harvest and low yields. Due to frost damage, the yield in 2020 was extremely low and Fred had to buy in some grapes. After entry, a gentle pressing and fermentation and élévage in glass tanks buried in the ground of the cellar. In this, depending on the vintage, the wine stays up to 30 months before being bottled. For the 2019 vintage it was 10 months. |
