Vineyard | The vineyard for Columella is found on Paardeberg Mountain. An environment with a poor terroir, little water and thus irrigation is necessary. The good thing about Paardeberg Mountain is that there are many old vines to be found. |

Vinification | Everything is hand picked and then hand sorted. The grapes are destemmed piece by piece and fermentation takes place in large open barrels. This is followed by aging in barriques, 10% of which are new for 12 months. After this, the wine is transferred to large wooden casks for another 12 months of aging |
