Vineyard | The name of this vineyard refers to an old story about a nun who predicted the birth of the child of Louis the 14e. When the vineyards were sold in the 18th century, the Bouchard family acquired this monopole in the heart of the premier cru Beaune Grèves. In total the vineyard is 3.92 hectares and the soil consists mainly of limestone, pebbles, sand and clay. |

Vinification | After a manual harvest in 13 kilo crates, a manual selection follows. Depending on the vintage, the grapes are completely or partially destemmed. Fermentation takes about 15-20 days. The wine is matured in 225-litre oak barrels, of which 30-50% are new. The wine stays 12-14 months in oak, depending on the vintage. |
