The winemaker

Winemaker Country Region
Domaine Vincent Dancer France Bourgogne - Côte de Beaune
About the winemaker Vincent Dancer can be counted among the latest generation of hard working top producers in the Côte de Beaune. Born in Alsace, he started his domain in 1996 with vineyards that were in the family. We met Vincent in 2004 and immediately noticed that he is full of passion and only goes for the highest quality. When we speak to him, we are reminded of Gianfranco Soldera. Vincent is humble, passionate and has a great philosophy and vision. Like us, he believes that there is too much monoculture in many wine-growing areas and that there is too much and too often human intervention in nature. His new vineyards high above the village of Pommard show what his vision is. Here there is biodiversity, a vineyard where trees and vines grow in harmony with each other and where work is done entirely organically. Vincent thinks about everything and this is something you notice immediately when you first get to know him. The words modest, passionate, determined and conscientious characterize the person Vincent Dancer.

Details

Vineyard There are three different vineyards for the Burgundy chardonnay. The vineyard located in Puligny was planted in 1988 and purchased in 2013. In addition, two vineyards in Meursault were planted in 1999 and 2008.
Vinification Classic white winemaking with lagering on barriques. Vincent chooses to have a mix of new and used oak from different tonneliers to avoid a tonnelier signature. The wine must taste like the vintage and there is no intervention during vinification, fermentation sometimes takes several months. There is no filtering, only the addition of minimal sulfite before bottling.
Oak aging Yes
