Vineyard | Auxey-Duresses is the village behind Meursault and Monthélie. If you drive from Monthélie towards Auxey then on the left is the vineyard Les Ecusseaux. This vineyard is rich in limestone rock and on this soil is planted mainly pinot noir. |

Vinification | At Boyer-Martenot, all grapes are hand-picked and, upon receipt in the cellar, pressed with a pneumatic press. Fermentation is temperature controlled and the upbringing is on 225-liter wooden casks and on concrete eggs. One third of these barrels are new and in total there is a 20 month lagering period. Once a week there is batonnage. |
