Details
| Vineyard | The Clerget family's holdings in the aop Volnay have been expanded since 2022. Until then, it was 1.05 hectares and can be found on the Lieux-dits Ez Echards and Les Petits Gamets. The soil here is rich in alluvial deposits. From 2022, more vineyards have been acquired and these will first be marketed under the "négoce label". A poisot is a small well or water source and this tells something about the humidity of the soil in this 3.5 hectare lieu-dit. |

| Vinification | The vinification at Thibaud is highly dependent on the vintage. Vinification entière one year and no vinification the next, use of new oak depends on the appellation of origin etc. This Volnay Village, however, never has new oak. The upbringing in 228 liter oak barrels is 12 months and after this the wine stays on tank for another 4 months after blending. In 2019, all the bunches were de-stemmed. Six barrels made in 2019. |
