About the winemaker
One of the most striking wine companies in South Africa is without doubt De Toren Private Cellar, founded by Emil den Dulk and Albie Koch. A wine company, which has made a name for itself with red wines based on the five grape varieties from Bordeaux. Emil retired and handed the company over to new owners. Albie Koch now runs the daily operations together with the owners. The various wines from the hand of winemaker Charles Williams are known for their complexity, aging potential, accessibility and, of course, towering quality. Since they work with gravity, the wines have a different tannin structure and can be used in gastronomy in their youth. However, the wines also benefit from several years of cellar storage.

| Vineyard | The people at De Toren are accused by some critics of obsessive vineyard management. It can't go far enough for us. Before starting The Tower, Emil did extensive research on the terroir. With The Black Lion, the folks at De Toren have gone a little further. As with BOOK XVII, special vines have been selected based on infrared images. These vines are carefully treated and only 300 grams of grapes per vine are harvested. |

| Vinification | After harvesting (manually of course) the grapes are destemmed manually. After this the grapes go whole in new barriques, here the fermentation takes place. After 12 months the wine is transferred to new barriques again. Here the wine stays another 6 months. |
