About the winemaker Founded in 2025 and part of Artémis Domaines, Vignoble des Cabottes is one of the newest wineries in Burgundy. With 35 hectares of vineyards, divided into, among others, 10 hectares of Grand Crus and 22 hectares of Premier Crus, winemaker Frédéric Weber has a unique terroir at his disposal. Many vineyards are being farmed organically, but certification will follow. Montrachet, Corton-Charlemagne, Chevalier-Montrachet, Beaune 1er Cru Grèves Vignes de l’Enfant Jésus, and Meursault 1er Cru Perrières are just a few of the prestigious vineyards belonging to the estate.

Details

Vineyard	One of the most beautiful lieu-dits of the appellation. The name is derived from the laves: thin, flat stones that were formerly extracted from the ground and used to cover traditional Burgundian roofs. The vineyard covers 3.94 hectares and the soil is rich in calcareous clay.
Vinification	The harvest is manual and in 13-kilogram crates. Approximately 30% whole bunch is used for this wine. This is followed by fermentation for 20 months in 225-liter oak barrels, 35% of which are new. The wines are blended and then spend 3-4 months in stainless steel.
