About the winemaker
Of the 9 hectares Gerard Boulay owns, 8 hectares are on the slopes of Chavignol on Kimmeridgian or "terre blanche" soils (similar to the soils in Chablis), which he cultivates manually and has been growing organically since 1990. The youngest vines in the estate were planted by Gérard Boulay in 1972 and the average vine age is about 45 years. Vinification for the wines takes place without intervention. All wines are raised on a mix of foudres and 300 liter barrels with the exception of the Sancerre Chavignol Tradition, which also matures on tank. Gerard adds no yeasts and little to no sulfite during vinification. He sees his role as "guardian" to make sure nothing goes wrong. Generally, he works instinctively because he wants to "let the wine live" and tries not to disturb the natural process. "C'est la nature qui fait le vin"

Details
| Vineyard | Boulay farms two parcels in this terroir, including one within the original Clos of the vineyard. Vines on this slope of Kimmeridgian limestone and clay (terre blanches) are aged between 30 and an incredible 110 years! The soils here are particularly rocky and strewn with fossils, much like parts of Chablis. These textured soils make this parcel very difficult to farm. A second, even steeper parcel lies closer to the village. |
