About the winemaker
A great wine comes from respect for land, climate, terroir and grape, is Pierre-Jean Villa's belief. The only logic is to protect the diversity of the terroir in the vineyard and to make wines that properly reflect the terroir. In the cellar, Pierre-Jean Villa believes in a vinification that involves as little intervention as possible: use of natural yeasts, spontaneous fermentation, and crossing and bottling take into account the position of the moon. In the end, the wine must express the honest and delicate balance between the typicity of the terroir and the ethics of the winemaker.

Vineyards with a light soil, composed of slate and gneiss on a granite base. Exposure to the south / southeast. Planting is 5500 to 8500 sticks per hectare, relatively young sticks, 10 years old. |

| Vinification | After the manual harvest, the grapes are pressed "whole-bunch". Debourbage for 12 to 24 hours followed by vinification in 15 hectolitre casks, demi-muids and amphorae. The aging is 12 months and the bottling takes place six weeks after assembling. |
