About the winemaker
Marie-Pierre Manciat is currently in charge at the estate that was founded by her parents. Her father's family owned the vineyards in appellation Macon and her mother's family owned the vineyards in appellation Pouilly Fuissé. Today the estate owns about 12 hectares of vineyards and Marie-Pierre's philosophy is that the wines are made in the vineyard. Thus, a lot of attention is paid to the vineyards and the vines.

| Vineyard | The Les Crays vineyard is found back in the village of Vergisson near that beautiful rock formation. Les Crays has a soil with a lot of calcareous clay and the vines are over 5o years old. There are 8000 vines per hectare, so there is a good planting density. Through a green harvest, if necessary, the yield is kept at about 45 hl/ha. Efforts are made to harvest at a potential alcohol content no higher than 13%. |

| Vinification | After harvest the grapes are pressed immediately and the débourbage takes about 24 hours. No yeasts are added for the alcoholic fermentation. This fermentation takes place for 60% in oak barrels. Weekly batonnage is used to obtain structure and complexity in the wine. If it is necessary to filter before bottling, this is done with bentonite. |
