About the winemaker
Founded in 2025 and part of Artémis Domaines, Vignoble des Cabottes is one of the newest wineries in Burgundy. With 35 hectares of vineyards, divided into, among others, 10 hectares of Grand Crus and 22 hectares of Premier Crus, winemaker Frédéric Weber has a unique terroir at his disposal. Many vineyards are being farmed organically, but certification will follow. Montrachet, Corton-Charlemagne, Chevalier-Montrachet, Beaune 1er Cru Grèves Vignes de l’Enfant Jésus, and Meursault 1er Cru Perrières are just a few of the prestigious vineyards belonging to the estate.

| Vineyard | The stony soil to which the vines cling inspired the name of this exceptional climat: Perrières. This Premier Cru has long been highly appreciated for its finesse and purity. Back in the mid-nineteenth century, the oenologist M. de Vergnette wrote in a study that ‘After the true Montrachet, I know of no white wine so exquisite’. Later, Dr Lavalle listed it as Tête de Cuvée in his 1855 classification. |

| Vinification | The harvest is manual and in 13-kilogram boxes. There is a gentle pressing that takes up to 2 hours. This is followed by fermentation, for 21 months, in 225-liter oak barrels of which 30% are new. The wines are blended and then stay on stainless steel for 3-4 months. |
