About the winemaker
After a career as a physiotherapist, Laurent Vaillé decided in the 1980s that he wanted to become a winemaker after all. After apprenticeships with Jean François Coche, Eloi Durrbach and Gerard Chave, among others, he settled in Aniane (his native region) in a place, which everyone thought was impossible to produce top wines. Since then, the estate has enjoyed cult status for many years. The vineyards on the Terrasses du Larzac were planted with Gérard Chave's syrah, marsanne and roussane after intensive processing, including dynamite, and his cabernet sauvignon was sourced from Eloi Durrbach of Domaine Trévallon.

Details
| Vineyard | Laurent Vaillé returned to his native soil in the village of Aniane in the late 1980s and focused on the vineyards in the hills surrounding this village. Vineyards that no one really saw any point in, too difficult to cultivate etc. The soil here consists of limestone, boulders and smaller stones and the grapes grow in gobelet. The vineyards have an exposure to the south and give low yields, between 20 and 22 hl/ha. The white grapes have been infested in recent years by wild boar who simply ate the harvest. Only 1 hectare is planted with white grapes. |

| Vinification | Laurent Vaillé's white wine is done directly in oak and given a long elevage. He learned this during his time in Burgundy at Domaine Coche-Dury. The white wine has a huge storage potential. |
