About the winemaker
The Costantino family's vineyards can be found on the southeastern slopes of Mount Etna. Father Dino, with his son Fabio, has since learned that the vineyards can produce tremendous quality and, with great passion for their land, have built a wonderful winery with a ditto reputation. This wine estate has been fully certified organic for years and only autochthonous varieties are planted on the approximately 10 hectares of vineyards. Some of the vineyards have a planting density of 5,00 vines per hectare, while there are also vineyards with some 8,000 vines per hectare.

| Vineyard | The steep terraced vineyard in contrada Praino is located on the south-eastern flank of Etna at an altitude of about 650 metres, near Milo, north of Catania. The soil here consists of volcanic rock and volcanic sand. Relatively young vineyard with a planting density of 7,000 vines per hectare. |

| Vinification | After the manual harvest, the majority of the grapes are immediately pressed in an inert press, the remaining part undergoes a short skin maceration. This is followed by fermentation at 14°C-16°C. The wine matures for a number of months in stainless steel and then in the bottle. |
