About the winemaker
Veronica Ortega is considered the future queen of Spanish viticulture. She was born in Cadiz in the Sherry region. Veronica first worked in wine in Priorat with Alvaro Palacios, then in New Zealand and Burgundy. In Bourgogne even at the mythical Domaine de la Romanée-Conti, before settling in Bierzo. Here she worked from 2010 to 2014 at Raul Perez, another great winemaker. From 2014, however, Veronica has her own cellar and her star is rising. The Bierzo region in northwestern Spain is known for its red wines from the mencia grape. This is also the grape that Veronica excels with. All her grapes are organically grown and hand-picked.

Details
| Vineyard | The vineyards are located in and around Cobrano. There are 8 different plots that are worked biologically. The soils are rich in shale and clay. |
|---|---|
| Vinification | The harvest for this wine is completely manual and we use boxes of 18 kilos. The trusses are not destemmed and put in one large wooden trough. After this, the natural yeasts have to do their job. After fermentation, the wine is pressed and eventually the wine stays for another 15 months in used barriques, open casks and amphorae. |
