About the winemaker Domaine Costal is a collaboration between the renowned American wine importer Kermit Lynch and Chablis farmer Jean Collet, which arose after a discussion during a "barrel-tasting" in Collet's cellar. Today, Domaine Costal offers from Petit Chablis to Chablis Grand Cru, mostly from grapes sourced from organically farmed vineyards. The vinification varies from wine to wine, there are wines with only stainless steel as well as wines aged in concrete and French oak.

Details

Vineyard Vineyard was planted around 1996 and covers about 2 hectares with a planting density of 6,000 vines per hectare. The soil consists of a kimmeridge terroir. The so typical limestone rock that Chablis is known for. In the vineyard they work completely organically and therefore do not use herbicides etc.
Vinification The grapes are cold stabilized after harvest and vinification is done in the most natural way possible. After this, the wine is stored in temperature controlled stainless steel vats. Bottling is 13 months after vinification.
