About the winemaker
Lacrima Baccus has been making wines since 1890 and is therefore deeply rooted in Penedes, the wine region for the production of top Cava's. The team of Lacrima Baccus concentrates on making Cava's with a vintage, they also let the wines mature for at least 24 months. Because of this, the wines may also be called Reserva. The winery has been working completely organically since 2014 and this means that from harvest year 2017 all the wines may also be called organic. Xarel.lo, macabeo and parellada are the grapes used for this wine. All are harvested and vinified separately. After this, the final blend is made and the wine is bottled to undergo the second fermentation in bottle. So it takes a total of 2(!) years before the wines are ready to be sold. It is a serious and stately cava that can be served not only as an aperitif, but also as an accompaniment to oysters, tapas or even a paella. In addition to the cavas, a series of still wines are made from grape varieties, which are common in the Penedes.
