About the winemaker Founded in 2025 and part of Artémis Domaines, Vignoble des Cabottes is one of the newest wineries in Burgundy. With 35 hectares of vineyards, divided into, among others, 10 hectares of Grand Crus and 22 hectares of Premier Crus, winemaker Frédéric Weber has a unique terroir at his disposal. Many vineyards are being farmed organically, but certification will follow. Montrachet, Corton-Charlemagne, Chevalier-Montrachet, Beaune 1er Cru Grèves Vignes de l’Enfant Jésus, and Meursault 1er Cru Perrières are just a few of the prestigious vineyards belonging to the estate.

Vineyard	The vineyard of this wine has a long history dating back to 1220. The Bouchard family purchased the vineyard in the 19^th century and it has been a monopole ever since. In total, the vineyard is 3.36 hectares and the soil consists mainly of limestone and clay.
Vinification	After a manual harvest in 13-kilogram crates, a manual selection follows. The grapes are completely or partially destemmed depending on the vintage. Fermentation takes about 15-20 days. The wine is matured in 225-litre oak barrels, of which 30-40% are new. The wine stays 12-14 months in oak, depending on the vintage.
